Moon Cookies
What You Need
2 1/2 C all purpose flour
1 1/2 t baking soda
1 1/2 t baking powder
1 C butter, softened (2 sticks)
2 1/2 C sugar
1 egg
1 t vanilla extract
1 8-oz block of cream cheese, softened
1 stick butter, softened
4 C powdered sugar
1 t vanilla extract
1 t milk
Instructions
- Preheat oven at 350℉
- Combine flour, baking soda, and baking powder and stir. Set aside.
- In a large mixing bowl, cream butter.
- Add the sugar, mix well.
- Mix in egg and vanilla extract.
- Slowly add the dry ingredients. Mix thoroughly.
- With floured hands, take golf ball size pieces of dough and shape into crescents, and then flatten to 1/4″ or roll the dough on a floured surface to 1/4″ and use a floured crescent shaped cookie cutter.
- Bake on an ungreased baking sheet at 350℉ for about 10 minutes, until the sides begin to brown.
- While cookies are cooling, whip cream cheese and butter together.
- Gradually add powdered sugar.
- Add vanilla and mix well.
- Blend in milk. If too thick, add a little extra.
- Frost cookies when cooled.
